Today I'll make a Tomato Squash Feta Gratin.  Sounds interesting, huh?  Basically you cut the zucchini into wedges and create a lasagna-like layering of cheese and squash.  Looks pretty healthy, too.  Comment below if you'd like the recipe and I'll send you the link!
